You'd keep your gear from the previous game, you'd keep your health, you'd keep your rings, and NPCs would remember you from the old save file. You'd beat Ages, then start a new game of Seasons. Zelda: Oracle of Ages / Seasons had a NG+ option.

I'd love a NG+ for Stardew, but I'm not sure the best way to do it. Sometimes it's about rewarding the player for wanting to keep playing, and adding some stuff to make it more interesting.

New Game Plus isn't always about making it harder. Wind Waker's NG+ gave new outfits, gave a certain item earlier so you could work on the game's collection sooner, translated text you couldn't read before, and remember your collection progress from the previous save file. The point of NG+ modes is usually MORE challenge, not less. Preferably with the ability to select what aspects are retained.
